Beach Bistro owner Sean Murphy grew up in Canada but is now a very proud American.

In the much darker days of the Great Depression the American populist Huey Long promised that prosperity would return. “There will be a chicken in every pot, and a car in every garage.”
Murphy was inspired. This summer season the Bistro will feature a special grilled “Florida Cookery” version of “Chicken in a Pot” – as an optimistic reminder of the better times coming our way.
“We have sourced some fabulous, big, free range chickens – true yardbirds with great flavor. The birds are prepped with a savory grilling rub with island nuances of cumin and cinnamon and then splashed with fresh key lime juice kissed with sweet agave syrup.
The bird is grilled, then roasted to finish and served “in a pot” on oven-roasted veggies with a side of Madeira demi-glace and creamy comfort-mashed potatoes.
The chicken flavors are profound and even intriguing - but the presentation - the chicken, the pot, the potatoes and gravy, are reassuring in troubled times. They take me back to happy childhood days at my grandmother’s Sunday table.”
Chicken in a pot, grilled with key lime and then roasted with herbs will be coming soon to the weekday specials list at the Bistro.
And American good times will be “coming soon” too - with a “better chicken” in every pot.
